Demos are the preset target configurations used in the RT2a simulator. They are equivalent to the "scenarios" in RT3. You get to the RT2a simulator from the File menu in RT3.

When an exercise or practice problem refers to using ie "demo 4" it implies that you are to open the RT2a simulator and load Demo 4.

To get an overview of demos and RT2a, do a search function on "demo" and "RT2a" using the search option (left panel) of the Help file and Tutorial.
