I want to practice celestial sight computations using Ron Baker's sights, for example. Would it make that much of a difference if I use the 2015 Almanac? I took the course many years ago.

You will need the right almanac for the years being studied. but you can get almanac data for any year from www.starpath.com/usno

However, more to the point. If you wish to practice and hone your cel nav skills i would recommend our new book called Hawaii by Sextant.

It is the most thorough set of real ocean sights that is available, with all solutions provided and plotted.
