Is there any sort of certification process or verification that I have completed the course? Is this necessary if I want to apply my learning toward the ASA certification?

Yes, we offer several certification options. We have started a new Certification and Licensing section to elaborate on this process, but that is not completed yet.
In the meantime we have a discussion of this on our certification page.
As for ASA, specifically, we do have instructors authorized to offer this test if you are not convenient to an ASA facility. The main point is the Starpath course materials will prepare you for any of these tests, and if you succeed with the Starpath certification test (which is a take home test) you can be certain you are prepared for these other tests, which are timed and proctored and generally cost a bit more to process.
